My fave fave five veggies to grill that my kids love too!
- Eggplant
- Zucchini
- Yellow squash
- Sweet potatoes
- Asparagus
- Wash and trim veggies—peeling is not always necessary before grilling but check out the skin’s texture before serving to children. Avoid sweet potato skins though, which can be tough. Check out the eggplant skin for texture as well.
- Spray the grill lightly with olive oil before lighting.
- Spray the veggies lightly with olive oil.
- Add a teeny bit of salt (and pepper, and sometimes funky spices for the adults).
- Grill until it looks right: soft, light brown (not black!) and DELISH!
